RECIPE
*MAKES 2 SERVINGS
INGREDIENTS:
❀ 2 heaping tbsps grass-fed butter
❀ 2 heaping tbsps flour (I used all-purpose flour but tapioca or arrowroot flour works too, I’ve tried it!)
❀ 2/3 cup whole milk (or unsweetened almond, oat or cashew milk)
❀ 3/4 to 1 cup grated cheese (I used what I had on hand - mozzarella, parm, and cheddar)
❀ 1/4 tsp garlic powder
❀ Salt and pepper, to taste
❀ Approx 1 1/2 cups pasta of your choice (I used a small shape - Ditali)
DIRECTIONS:
- Cook your pasta according to the package directions.
- While the pasta is cooking, in a small pot over medium-low heat, melt the butter. Add the flour and continuously whisk. It will get clumpy but that’s when you add some milk.
- Slowly add milk and keep whisking until smooth and creamy. Stir in the garlic powder, salt, and pepper.
- Add the cheese and keep whisking until it melts and gets creamy. Add more milk a splash at a time if needed.
- Once the pasta and cheese sauce is done. Pour the cheesy goodness into the pot of pasta and gently mix to combine.
- Divide into bowls and top with salt and pepper, if desired.
