*MAKES 2 SERVINGS


INGREDIENTS:


❀ 2 heaping tbsps grass-fed butter

❀ 2 heaping tbsps flour (I used all-purpose flour but tapioca or arrowroot flour works too, I’ve tried it!)

❀ 2/3 cup whole milk (or unsweetened almond, oat or cashew milk)

❀ 3/4 to 1 cup grated cheese (I used what I had on hand - mozzarella, parm, and cheddar)

❀ 1/4 tsp garlic powder

❀ Salt and pepper, to taste

❀ Approx 1 1/2 cups pasta of your choice (I used a small shape - Ditali)


DIRECTIONS:


  1. Cook your pasta according to the package directions.
  2. While the pasta is cooking, in a small pot over medium-low heat, melt the butter. Add the flour and continuously whisk. It will get clumpy but that’s when you add some milk.
  3. Slowly add milk and keep whisking until smooth and creamy. Stir in the garlic powder, salt, and pepper.

  4. Add the cheese and keep whisking until it melts and gets creamy. Add more milk a splash at a time if needed.
  5. Once the pasta and cheese sauce is done. Pour the cheesy goodness into the pot of pasta and gently mix to combine.
  6. Divide into bowls and top with salt and pepper, if desired.
